Chocolate truffles:

  • 16 large medjool dates about 1.5 cups, seeds removed
  • 1/2 cup chopped walnuts toasted if desired
  • 1/3 cup cocoa powder
  • 2 tablespoons maple syrup or agave nectar
  • 1/2 cup finely shredded coconut flakes unsweetened
  • ¼ teaspoon kosher salt
  • 2 tablespoons of molasses

    Blend all the ingredients in a food processor until everything is well incorporated, about 15-25 seconds. Roll the mixture into individual truffles/balls and then roll some of them in coconut flakes and some in cocoa powder. Set aside

Molasses Ginger Date Cookies:

#1: In a bowl mix dry ingredients:

  • 2.5 Cups of Almond Flour
  • 1/2 Cup of Arrowroot
  • 1 TBSP of Salt
  • 1 TBSP of Cinnamon
  • 1 TBSP of Nutmeg
  • 1 TBSP of Ginger Powder
  • 1 TBSP of Ginger Crystals
  • 1 TBSP of Baking Powder
  • 2 Cups of Chopped Almonds

(Stir to mix)

#2: Blend wet ingredients in a mixer until dates are broken down to small bites:

 

#3: Hand mix wet ingredients into dry ingredient bowl.(work out has begun)

#4: Add a tablespoon of coconut milk or almond flour (whichever is needed) to get dough consistent to scoop into medium size balls onto a cookie sheet. 

#5: Bake 350* in oven for 10-15 minutes or until golden browned.
