Chocolate truffles:
- 16 large medjool dates about 1.5 cups, seeds removed
- 1/2 cup chopped walnuts toasted if desired
- 1/3 cup cocoa powder
- 2 tablespoons maple syrup or agave nectar
- 1/2 cup finely shredded coconut flakes unsweetened
- ¼ teaspoon kosher salt

Molasses Ginger Date Cookies:
#1: In a bowl mix dry ingredients:
- 2.5 Cups of Almond Flour
- 1/2 Cup of Arrowroot

- 1 TBSP of Cinnamon
- 1 TBSP of Nutmeg
- 1 TBSP of Ginger Powder
- 1 TBSP of Ginger Crystals

- 2 Cups of Chopped Almonds
(Stir to mix)
#2: Blend wet ingredients in a mixer until dates are broken down to small bites:
- 2 Eggs
- 1.5 sticks of room melted Kerrygold Irish Butter
- 1/4 cup of Blackstrap Molasses
- 20 Pitted Medjool Dates
- 1 Cup Coconut Milk from a can
- 1 TBSP of Vanilla
- 3 Scoops of nutty Peanut Butter
- 2 TBS of Water
#3: Hand mix wet ingredients into dry ingredient bowl.(work out has begun)
#4: Add a tablespoon of coconut milk or almond flour (whichever is needed) to get dough consistent to scoop into medium size balls onto a cookie sheet.
#5: Bake 350* in oven for 10-15 minutes or until golden browned.

Choose your favorite fruit
Orange Gummies
- 2 cups ozonated water
- 2 tablespoon of molasses
- 1 tablespoon maple syrup
- 4 tablespoons Knox Gelatin (no sugar or flavor)
Apple Cinnamon
- 2 cup pure apple juice (no sugar added)
- 2 tablespoon of molasses
- 3-4 drops cinnamon revive oil or 1 tablespoon spice
- 2 tablespoons maple syrup
- 4 tablespoons Knox Gelatin (no sugar or flavor)
Pomegranate
- 2 cup pure pomegranate juice
- 2 tablespoon of molasses
- 2 tablespoon honey
- 4 tablespoons Knox Gelatin (no sugar or flavor)
Cranberry Orange
- ¾ cup + 2 tablespoons pure orange juice
- 2 tablespoons pure cranberry juice
- 2 tablespoon of molasses

Instructions:
- In a small saucepan, combine the juice or water and the maple syrup or honey and heat over medium heat until steaming hot (before boil).
- Lower the heat to the lowest setting and if using, stir in the cinnamon oil (3 - 4 drops). The more, the healthier!
- Whisk in the gelatin one tablespoon at a time. Wait for it to dissolve before adding the next.
- Once the gelatin is fully dissolved, remove from the heat and use a dropper to put in your gummy molds.
- Put in the refrigerator to firm up completely (10 to 15 minutes for them to firm up enough to pop out.)
- If you don’t have enough molds to use all the gummy mixture at once, you can pour the extra into a small pan and cut them into squares.
- Store the gummies in a sealed container in the refrigerator. Repeat for other flavors!
